Skipjack Tuna is a cosmopolitan pelagic fish found in tropical and warm-temperate waters, also a “highly migratory species” – these fish are found around the world and can travel across an entire ocean basin. It is a very important species for fisheries.
Good Quality Skipjack Tuna meat is deep red in color. Smaller fish are lighter red in color. Skipjack Tuna is relatively small species of tuna, weighing between five to six pounds and averaging one to two feet in length, and also shorter lived . This condition tends to make Skipjack a Tuna species that is lower in mercury accumulation.
Skipjack Tuna is an excellent source of healthy, low in saturated fat, low in sodium, also source of selenium, vitamin B3 (niacin), vitamin B12, vitamin B6, and protein. Skipjack Tuna also provides valuable amounts of omega-3’s (DHA and EPA).
Skipjack Tuna is used extensively in Japanese cuisine, sold as canned light tuna, and it's also sold fresh or frozen.
Some sushi markets prefer using Skipjack Tuna because it’s comparable to Yellowfin Tuna when grilled or fried preparations.
